Ingredients

  • Olives & Cheese: 1½ cups mixed olives (green and black, pitted), 200 g feta cheese, cut into 1 cm cubes
  • Marinade: 3 tbsp extra virgin olive oil, 1 tbsp lemon juice (freshly squeezed), 1 tsp dried oregano, 1 tsp fresh thyme leaves (optional), 1 small garlic clove, thinly sliced, ½ tsp red pepper flakes (optional), freshly ground black pepper to taste
  • Garnish: 2 tbsp fresh parsley chopped, zest of ½ lemon

Instructions

Step 1:
In a medium bowl, combine the mixed olives and feta cubes.
