# What You Need:

→ Olives & Cheese

01 - 1½ cups mixed olives (green and black, pitted)
02 - 7 oz feta cheese, cut into ⅜ inch cubes

→ Marinade

03 - 3 tbsp extra virgin olive oil
04 - 1 tbsp fresh lemon juice
05 - 1 tsp dried oregano
06 - 1 tsp fresh thyme leaves (optional)
07 - 1 small garlic clove, thinly sliced
08 - ½ tsp red pepper flakes (optional)
09 - Freshly ground black pepper, to taste

→ Garnish

10 - 2 tbsp fresh parsley, chopped
11 - Zest of ½ lemon

# Steps:

01 - Place the mixed olives and feta cubes into a medium mixing bowl and combine gently.
02 - In a small bowl, whisk together the olive oil, lemon juice, dried oregano, thyme (if using), sliced garlic, red pepper flakes, and black pepper until blended.
03 - Pour the marinade over the olives and feta cubes and toss gently to coat evenly without breaking the cheese.
04 - Cover the bowl and refrigerate for at least 30 minutes or up to 4 hours to allow flavors to meld.
05 - Remove from the refrigerator and bring to room temperature. Sprinkle with chopped parsley and lemon zest, toss gently, then serve.
