Instructions

Step 1:
Pat the beef cubes dry and season with salt and pepper.
Step 2:
In a large Dutch oven or heavy-bottomed pot heat olive oil over medium-high heat. Brown the beef in batches until well-seared on all sides transfer to a plate.
Step 3:
In the same pot add onion and cook for 3–4 minutes until softened. Stir in garlic smoked paprika and tomato paste cook for 1–2 minutes until fragrant.
Step 4:
Return beef to the pot. Add carrots potatoes celery bay leaf and thyme. Stir to combine.
Step 5:
Pour in beef stock and red wine. Bring to a simmer scraping any browned bits from the bottom.
Step 6:
Cover and reduce heat to low. Simmer gently for 1½–2 hours stirring occasionally until beef is fork-tender and vegetables are cooked through.
Step 7:
Discard the bay leaf. Taste and adjust seasoning if needed.
Step 8:
Ladle into bowls and garnish with chopped parsley.
