# Expert Advice:

01 -
  • It turns cold pizza into something even better than it was fresh, with crispy edges and gooey melted cheese in every bite.
  • You only need two ingredients plus butter, and it comes together in under fifteen minutes with zero prep work.
  • It's endlessly adaptable, so you can use whatever pizza style or leftovers you have on hand and it still works perfectly.
02 -
  • Medium heat is crucial, too high and the crust burns before the cheese melts, too low and it gets greasy instead of crispy.
  • Don't overstuff the filling or it will squeeze out the sides when you press it in the skillet, a little restraint goes a long way here.
  • Let it rest for a minute after cooking or the molten cheese will spill out everywhere when you bite into it.
03 -
  • Use a cast iron skillet if you have one, it holds heat evenly and gives you the crispiest, most golden crust every time.
  • Press down gently with the spatula while it cooks to help the cheese melt faster and create better contact with the pan for even browning.
  • If you're making multiple servings, keep the finished ones warm in a low oven while you cook the rest so everyone eats them hot and crispy.
