# What You Need:
→ Vegetables
01 - 2 cups fresh spinach, chopped
02 - 1 garlic clove, minced
→ Dairy
03 - 1/2 cup crumbled feta cheese
04 - 1/2 cup shredded mozzarella cheese
05 - 2 tablespoons unsalted butter, softened
→ Bread
06 - 4 thick slices country-style or sourdough bread
→ Seasonings
07 - 1 tablespoon olive oil
08 - 1/4 teaspoon black pepper
09 - Pinch of salt
# Steps:
01 - Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
02 - Add chopped spinach to the skillet and cook, stirring frequently, until wilted, approximately 2 minutes. Season lightly with salt and pepper, then remove from heat and allow to cool slightly.
03 - Transfer sautéed spinach to a mixing bowl and combine with crumbled feta cheese and shredded mozzarella cheese. Mix thoroughly until well incorporated.
04 - Arrange bread slices on a work surface. Distribute spinach-feta filling evenly over two slices, then top each with a remaining bread slice to form two complete sandwiches.
05 - Apply softened butter evenly to the outer surfaces of both sandwiches.
06 - Heat a clean skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook for 3 to 4 minutes per side, applying gentle pressure, until bread achieves golden-brown color and cheese fully melts.
07 - Remove sandwiches from heat and allow to rest for 1 minute. Slice diagonally and serve immediately while warm.
