# Steps:
01 - In a large mixing bowl, combine oats, chocolate chips, and coconut if using.
02 - In a separate medium bowl, stir together peanut butter, honey or maple syrup, vanilla extract, and salt until smooth and well incorporated.
03 - Pour wet mixture over dry ingredients and mix thoroughly with a wooden spoon or spatula until evenly combined throughout.
04 - Using your hands or a small cookie scoop, roll mixture into 1-inch diameter balls.
05 - Place shaped balls on a parchment-lined baking tray and refrigerate for at least 30 minutes to firm up.
06 - Transfer cooled energy balls to an airtight container and refrigerate for up to one week.
