Simple French onion soup with caramelized onions, aromatic broth, crusty bread, and rich melted cheese.
# What You Need:
→ Vegetables
01 - 3.3 lb yellow onions, thinly sliced
→ Dairy
02 - 4.2 tbsp unsalted butter
→ Liquids
03 - 8.5 cups vegetable broth (substitute beef broth for richer flavor)
→ Bread & Topping
04 - 6 slices baguette, preferably day-old, cut 0.8 inches thick
05 - 4.2 oz Gruyère cheese, grated
# Steps:
01 - Melt butter in a large heavy-bottomed pot over medium heat. Add sliced onions and cook, stirring frequently, until deeply golden and caramelized, about 30 to 35 minutes.
02 - Add broth to the pot, scraping browned bits from the bottom. Bring to a simmer, reduce heat, and gently cook for 15 minutes. Season with salt and pepper to taste.
03 - Preheat the oven broiler. Ladle soup into oven-safe bowls.
04 - Top each bowl with a slice of baguette and a generous amount of grated Gruyère cheese.
05 - Place bowls on a baking sheet and broil until cheese is melted and golden brown, about 2 to 4 minutes.
06 - Serve hot with caution due to hot bowls.
