# Steps:
01 - Cut bread slices into 1/2-inch cubes to create bite-sized pieces.
02 - Whisk eggs, milk, sugar, cinnamon, vanilla extract, and salt in a medium bowl until smooth.
03 - Add bread cubes to the egg mixture and toss gently to coat, allowing them to soak for 2 to 3 minutes.
04 - Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add half of the soaked bread cubes in a single layer. Cook, turning frequently, until golden brown and crisp, about 2 to 3 minutes. Remove and repeat with remaining butter and bread cubes.
05 - Combine sugar and cinnamon in a small bowl.
06 - Toss the cooked mini French toast cubes in the cinnamon sugar mixture until evenly coated.
07 - Serve the mini French toast bites warm in a bowl as cereal, optionally topped with milk or maple syrup.
