# Steps:
01 - Preheat the oven to 300°F. Prepare a baking sheet by lining it with parchment paper or a silicone baking mat.
02 - In a large bowl, whisk the egg white and water together until frothy but not stiff.
03 - Add the almonds to the bowl and toss thoroughly to ensure each almond is coated with the egg white mixture.
04 - In a separate small bowl, mix the granulated sugar, ground cinnamon, ground nutmeg if using, and sea salt evenly.
05 - Sprinkle the sugar and spice blend over the coated almonds and stir until the almonds are uniformly covered.
06 - Stir in the vanilla extract carefully to distribute flavor.
07 - Spread the almonds in a single, even layer on the prepared baking sheet.
08 - Bake for 25 to 30 minutes, stirring every 10 minutes to promote even roasting until the almonds turn golden and become fragrant.
09 - Remove from the oven and allow almonds to cool fully on the baking sheet to let the coating crisp.
