03 - If using whole blackcurrants, divide them evenly among popsicle molds.
04 - Pour the cooled blackcurrant mixture into the molds, leaving approximately 1/4 inch space at the top for expansion.
05 - Insert popsicle sticks into the center of each mold and transfer to freezer. Freeze for a minimum of 4 hours until fully set.
06 - Run the outside of the molds briefly under warm water and gently pull out the popsicles from the molds.

# Expert Advice:

01 -
  • They taste like summer in a stick, with that perfect balance of sweet and tart that makes you reach for another before the first one is even gone.
  • Honestly, they're so easy that even when you're exhausted from the heat, you can have them frozen and waiting in less than fifteen minutes of actual work.
02 -
  • The biggest mistake I made early on was not letting the juice cool completely before freezing, which resulted in oddly textured popsicles that didn't set properly.
  • Room temperature is key because it ensures even freezing and prevents the sugar from crystallizing into crunchy, icy patches.
03 -
  • Buy blackcurrant juice in bulk during the season when it's cheapest, then freeze it in ice cube trays so you can make these anytime without hunting for fresh juice.
  • The moment you unmold them under warm water is crucial: a few seconds is all you need, and rushing this step is how popsicles break.
