02 - 2 tablespoons neutral oil (canola or vegetable)
03 - 1/2 teaspoon salt
04 - 1/4 teaspoon garlic powder (optional)

→ Chicken Cream Cheese Dip

05 - 1 cup cooked shredded chicken breast
06 - 4 ounces cream cheese, softened
07 - 1/4 cup mayonnaise
08 - 2 tablespoons sour cream
09 - 1 tablespoon lemon juice
10 - 1/4 cup finely chopped green onions
11 - 1/2 teaspoon garlic powder
12 - 1/2 teaspoon onion powder
13 - 1/4 teaspoon black pepper
14 - 1/4 teaspoon salt, adjust to taste

# Steps:

01 - Set the air fryer to preheat at 350°F (175°C).
02 - Cut each lumpia wrapper into four strips or triangles. Lightly brush them with oil and season with salt and optional garlic powder.
03 - Arrange the wrapper pieces in a single layer in the air fryer basket. Air fry for 4 to 5 minutes, shaking halfway through, until they are golden and crispy. Repeat in batches if necessary. Allow to cool.
04 - In a medium bowl, blend cream cheese, mayonnaise, sour cream, and lemon juice until smooth.
05 - Fold shredded chicken, chopped green onions, garlic powder, onion powder, black pepper, and salt into the mixture. Stir until evenly combined.
06 - Transfer the dip to a serving bowl. Serve immediately alongside the cooled lumpia chips or refrigerate until ready to serve.

# Expert Advice:

01 -
  • It gives you that deep-fried crunch without the mess or guilt of standing over a pot of oil.
  • The dip is rich and tangy with just enough chicken to make it feel like a real meal in disguise.
  • You can prep the dip ahead and fry the chips fresh when guests arrive, so you look effortless.
02 -
  • Don't overcrowd the air fryer basket or the chips will steam instead of crisp, and you'll end up with chewy, sad wrappers.
  • Let the chips cool completely before serving, because they continue to crisp as they sit and they're fragile when they're hot.
  • If the dip tastes flat, it's usually because you need more lemon juice or salt, so taste and adjust before you give up on it.
03 -
  • Keep a damp towel over the stack of wrappers while you work so they don't dry out and become impossible to cut.
  • Brush the oil on with a light hand, because too much will make the chips greasy instead of crisp.
  • Taste the dip before you serve it, because every batch of chicken and every brand of cream cheese is a little different, and you might need to tweak the seasoning.
